  • 1 avocado, peeled, seeded and sliced
  • 2tablespoons basil, shredded
  • 1/2 small red onion, finely sliced
  • 1/2 cup fresh orange juice
  • 2 chicken breast fillets
  • 2 nectarines
  • 1/4 cup extra virgin olive oil
  • 4 slice country loaf mixed grain
  • 1tablespoons mustard
  • 150grams mixed lettuce

Method

Step 1 of 4

Place chicken breast fillets in a deep frying pan and cover with cold water. Bring to the boil over medium heat. Reduce heat to low. Cover and simmer for 10 minutes. Turn off the heat and leave for a further 5 minutes.

Meanwhile, halve nectarines and remove stones. Cut into wedges and combine in a large bowl with lettuce, red onion, and avocado.

Step 3 of 4

To make dressing, whisk orange juice, oil, mustard, and salt together in a bowl until combined. Stir in basil. Shred cooked chicken and add to salad. Pour over dressing and toss together.

Step 4 of 4

Serve with a slice of crusty wholegrain bread.
