  • 1 vanilla bean
  • 6 cup caster sugar
  • 6 mandarins (seedless)

Method

Step 1 of 3

Roughly chop 2 mandarins, including peel, and process in a food processor with 1 cup sugar until puréed. Transfer to a large, deep microwave-safe bowl. Peel remaining mandarins, reserving half the peel (discard the rest). Roughly chop mandarin flesh and add to bowl with puréed mixture. Finely shred reserved peel and add to bowl. Stir in vanilla bean and 1 cup water.

Microwave, uncovered, on high for 10 minutes or until peel is tender. Remove vanilla bean. Using a small knife, scrape out seeds and stir into fruit mixture with vanilla pod. Stir in remaining sugar and cook on high for 20 minutes, stirring every 3 minutes, or until cooked (see tip).

Step 3 of 3

Carefully remove from microwave and stand for 5 minutes. Discard vanilla pod. Ladle marmalade into hot, sterilised jars. Seal when cold.
