  • 1 avocado, deseeded, sliced
  • 1/4 cup coriander leaves, chopped (plus extra leaves to garnish)
  • 800grams washed potatoes, cut into quarters
  • 1tablespoons ground cumin
  • 1teaspoons garam masala
  • 400grams can chickpeas, drained, rinsed
  • mango chutney (to serve)
  • 60grams baby spinach leaves (to serve)
  • 2tablespoons vegetable oil

Method

Step 1 of 3

Steam potato over boiling water for 10 minutes or until tender. Cool slightly. Peel and place in a bowl. Roughly mash with a fork. Stir in chickpeas, spices and coriander leaves. Season with salt.

Step 2 of 3

Shape mixture into patties and place on a plate. Chill for 30 minutes.

Step 3 of 3

Heat the oil in a non-stick frying pan. Cook patties, in batches, for 4 minutes each side, turning carefully, or until golden. Serve with avocado and baby spinach leaves. Garnish with extra coriander and top with a dollop of chutney.
