  • 1/4 cup extra virgin olive oil
  • 420grams canned Woolworths no-added-salt chickpeas, rinsed, drained, dried
  • 1/4 bunch kale, stalks finely chopped, leaves coarsely chopped
  • 1/2teaspoons cayenne pepper
  • 1teaspoons sumac
  • 50grams feta, crumbled

Description

Try these baked sweet potato boats loaded with a crunchy kale, chickpea and feta topping. These sweet potato beauties look as impressive as they taste.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line 2 large baking trays with baking paper.

Step 2 of 4

Brush sweet potato with 1 tbs oil. Place, cut-side down, on one tray. Bake for 30 minutes or until tender when pierced with a fork.

Step 3 of 4

Meanwhile, place chickpeas and kale in a bowl. Add remaining oil and spices. Toss to combine, ensuring leaves are well coated. Arrange kale mixture on remaining tray. Bake during last 10 minutes of sweet potato cooking time or until kale is crispy.

Step 4 of 4

Add feta to kale mixture, then toss to combine. Turn sweet potato cut-side up. Top with kale mixture. Season with pepper, then serve.
