  • 1 cup apple cider vinegar
  • 1kilograms red washed potatoes, quartered
  • 2tablespoons rice bran oil
  • 2 sprigs rosemary, finely chopped
  • 6 cups water, boiled
  • 2teaspoons sea salt flakes

Description

Jazz up your crispy, golden spuds with this easy-to-follow salt and vinegar roast potato recipe. Each bite delivers big crunch and amazing flavour.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Combine vinegar, potatoes and water in a large saucepan. Bring to the boil, then reduce heat and simmer for 10-15 minutes or until potatoes are tender. Drain well and cool for 10 minutes to dry slightly.

Step 2 of 4

Meanwhile, combine rosemary and salt flakes in a small bowl and set aside.

Step 3 of 4

Toss potatoes with oil and of the salt mixture until well coated.

Step 4 of 4

Line a large oven tray with baking paper. Place potatoes in a single layer on tray. Roast for 30-35 minutes, turning halfway through cooking time, until golden and crispy. Scatter with remaining salt mixture to serve.
