  • 1/2 cup sour cream
  • 4 large potatoes, scrubbed
  • 2tablespoons wocestershire sauce
  • 2tablespoons barbecue sauce
  • 1/2 cup tomato sauce
  • 1tablespoons chives, finely chopped
  • 1/2teaspoons dried thyme leaves (or 1 tsp fresh thyme leaves)
  • 1/4 cup maple syrup
  • baby rocket leaves (to serve)
  • 2tablespoons olive oil
  • 1 garlic clove, crushed
  • 2tablespoons brown sugar
  • 4 tomatoes, halved lengthways
  • 1tablespoons American mustard
  • 1.40kilograms beef scotch fillet
  • 1/4 cup breadcrumbs

Method

Step 1 of 4

Combine sauces, maple syrup, sugar and mustard in a shallow ceramic dish. Cut beef into 7 steaks and place in marinade. Turn to coat well. Cover and refrigerate for at least 1 hour.

Step 2 of 4

Preheat oven to 200°C. Put potatoes on an oven tray and prick. Sprinkle with salt. Bake for 45 minutes or until soft.

Step 3 of 4

Put tomatoes on a lined baking tray. Combine breadcrumbs, garlic, oil and thyme in a bowl. Sprinkle over tomato. Bake for 25 minutes or until golden.

Step 4 of 4

Remove steaks from fridge and bring to room temperature. Heat a barbecue grill or char-grill pan over medium-high heat. When hot, add steaks and cook for 3 minutes each side, for medium rare, or until cooked to your liking. Transfer a steak and a potato to each serving plate. Cut a small cross on the top of potatoes. Spoon sour cream on top and sprinkle with chives. Place 2 tomato halves onto the plates. Sprinkle with baby rocket. Serve.
