- 1 granny smith apple
- 1 zucchini
- 1 cup wholemeal flour
- 3/4 cup buttermilk
- 1/4 cup olive oil
- 2 free-range eggs
- 1/4 cup brown sugar

Method
Step 1 of 4
Preheat oven to 190°C. Line a 12-hole muffin tray with paper cases.
Step 2 of 4
Grate zucchini and apple. Squeeze excess moisture from both and place in a bowl with flours, sugar and mixed spice. Mix to coat the apple and zucchini well.
Step 3 of 4
In a separate bowl, whisk eggs, oil, buttermilk and vanilla extract together. Pour into dry ingredients and stir until just combined. Divide mixture between paper cases.
Step 4 of 4
Bake for 25-30 minutes or until brown. Turn out on a wire rack to cool.
