Chicken & Avocado Rice Paper Rolls
10 Ingredients
- 8 rice paper wrappers (22cm-round)
- 1/4grams snow pea shoots
- 2tablespoons coriander, chopped
- 1 Lebanese cucumber
- 1teaspoons salt-reduced soy sauce
- 1 cup baby spinach leaves
- 2tablespoons light mayonnaise
- 1 avocado
- 1 cup brown rice, cooked
- 2 cup cooked skinless chicken, shredded (from the deli)

Method
Step 1 of 5
Save time in the kitchen by using a Woolworths ready-to-go barbecue chicken. Remove the skin and shred the breast for a super quick meal! Or swap your chicken out for a different protein, such as a hard boiled egg or even tuna.

If your kids aren’t fan of cucumber and snow pea shoots, mix these wraps up with different veggies like lettuce, capsicum or carrot. The sky’s the limit with delicious vegie additions!

Be careful not to soak the wrap for too long otherwise it will tear and become tricky to roll.

Make sure you leave enough space below and on each side to wrap up, just like you would a present!
