  • 1/4 cup coconut sugar
  • 1/2 cup chunky nut crispy oat clusters
  • 2tablespoons coconut oil, melted

Method

Step 1 of 8

Preheat oven to 175°C.

Step 2 of 8

Line or lightly oil 6-8 muffin holds of a muffin tray.

Step 3 of 8

In a large bowl, mix together the flour, coconut sugar, baking powder and bicarbonate of soda until combined.

Add the grated apple, milk, and coconut oil to a bowl and mix combine.

Step 5 of 8

Pour into the bowl of dry ingredients and mix to combine.

Step 6 of 8

Divide into your muffin liners.

Sprinkle with crispy oat cloasters, lightly pressdown a little to ensure they stick.

Step 8 of 8

Place in the oven to bake for 20-25 minutes.
