  • 4 sheet fresh lasagne, halved crosswise
  • 2tablespoons mint leaves, torn if large
  • 2 punnet cherry tomatoes, halved
  • 4 ripe roma tomatoes, sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup pecorino, shaved
  • 220grams buffalo mozzarella*, torn
  • 1/3 cup basil leaves, torn if large
  • 1tablespoons thyme leaves, chopped
  • 2 garlic cloves, thinly sliced

Method

Step 1 of 3

Preheat oven to 180°C. Line an oven tray with baking paper. Toss cherry tomatoes with thyme, garlic and half the oil. Season to taste. Transfer to prepared tray. Bake for 30 minutes or until lightly browned and wrinkled.

Step 2 of 3

Meanwhile, cook lasagne sheets in a large saucepan of boiling, salted water for 4-5 minutes or until tender. Drain.

Step 3 of 3

Place a lasagne sheet on each plate. Top with basil, mint, roma and cherry tomatoes, mozzarella and pecorino. Repeat with a second layer. Drizzle with remaining oil and season. Serve.
