Method

Step 1 of 3

Preheat oven to 180°C. Line two baking trays with baking paper.

Step 2 of 3

Combine flour, oats, coconut and sugar in a large bowl. Heat spread and syrup together in a small pan over low heat until melted. Remove from heat. Dissolve bicarb of soda in 1 tbs boiling water and quickly stir into syrup mixture. Add to the dry ingredients and stir well to combine.

Step 3 of 3

Drop tablespoons of mixture onto the trays, leaving room for the biscuits to spread. Flatten slightly with your fingers. Bake for 20 minutes until golden. Cool on tray for 5 minutes, then transfer to a wire rack. Store in an airtight container once cool.
