Description

For a clever way to use up leftover Easter chocolates, make these chocolate chip cookies. Perfect with a side of milk.

Baking tip:

Replace 2 tablespoons of the plain flour with good-quality cocoa powder to make double choc cookies.

Method

Step 1 of 4

Preheat oven to 180°C. Line two baking trays with baking paper.

Step 2 of 4

Beat butter and both sugars together with electric beaters until pale and creamy. Beat in egg and vanilla.

Step 3 of 4

Sift flour and bicarb soda over butter mixture, then fold in using a spatula. Stir in chopped Easter eggs.

Step 4 of 4

Drop spoonfuls onto baking trays, leaving space for spreading. Bake for 8-10 minutes or until golden. Cool on trays for 5 minutes, then transfer to a wire rack.
