  • 1/4 dried apricot
  • 1/4 cup currants
  • 3 cup plain flour
  • 1 cup milk
  • 2tablespoons white sugar
  • 60grams butter, chopped
  • 2teaspoons ground cinnamon or mixed spice
  • 1 egg
  • 1/2 cup brown sugar
  • 1/2 cup slivered almonds
  • 1/2 cup sultanas, chopped

Method

Step 1 of 5

Preheat oven to 200°C. Line a large 12-hole muffin tray with paper cases.

Step 2 of 5

Combine dried fruit, nuts, brown sugar and spices in a bowl. Set aside.

Sift flour and baking powder together into a large bowl. Stir in white sugar. Add butter and rub in using your fingertips. Whisk milk and egg together in a bowl, then pour into flour mixture and stir to form a soft dough.

Turn out dough onto a lightly floured surface and knead lightly until smooth. Roll out to a 36x26cm rectangle with the long side closest to you. Scatter over fruit mixture, leaving a 3cm border on the far side. Roll up from the long edge. Cut into 12x3cm-long pieces and place each into a hole of the muffin tray.

Bake for 20-25 minutes until golden. Remove from tray and place on a wire rack. Serve warm or cold.
