  • 1 clove garlic, crushed
  • 4 salmon portions, bones removed
  • 2tablespoons coriander, chopped
  • 2 Lebanese cucumbers
  • 1tablespoons mint, chopped
  • 1teaspoons ground cumin
  • 1 pinch pepper (for seasoning)
  • 3/4 cup natural yoghurt
  • 2tablespoons olive oil
  • 175grams potato chips (to serve)
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 3

Cut cucumbers in half lengthways. Scoop out seeds. Sprinkle with salt and place in a colander over a bowl. Set aside for 30 minutes to drain. Rinse lightly and pat dry with paper towel. Slice and place in a bowl.

Step 2 of 3

Meanwhile, combine yoghurt and 1 tablespoon of the oil, garlic, coriander, cumin and mint. Season to taste.

Step 3 of 3

Preheat BBQ grill on high. Brush salmon fillets with remaining oil on both sides. Reduce BBQ heat to medium and cook salmon fillets for 3-4 minutes each side until golden and just cooked. Top with cucumber, spiced yoghurt and mint leaves. Serve with potato chips.
