Fish Parcels with Dill & Lemon

- 30grams butter
- 4 white fish fillets
- 1tablespoons fresh dill sprigs
- 1 bunch asparagus, ends trimmed
- 1 lemon, sliced
- 1 pinch pepper (for seasoning)
- 300grams steamed vegetables (to serve)
- 1 pinch pink salt ground (to taste)
- 500grams potatoes
Method
Step 1 of 4
Preheat oven to 200°C. Cut 4 pieces of baking paper large enough to wrap fish.
Step 2 of 4
Place a piece of fish onto each piece of baking paper. Season with salt and freshly ground black pepper and top with some sprigs of dill. Place 2 slices of lemon and a few spears of asparagus on each. Dot with butter.
Step 3 of 4
Bring sides of the paper up and fold over a few times to seal. Fold in ends and tuck under parcel. Place onto a baking tray. Bake for 15 minutes or until fish is cooked.
Step 4 of 4
Serve parcels with steamed potatoes and extra vegetables, if desired.
