- 1/2 cup Free From Gluten plain flour
- 2 free range eggs
- 1 cup Free From Gluten breadcrumbs
- 1/2 bunch continental parsley, leaves picked, finely chopped (plus extra chopped parsley leaves for garnish)
- 500grams chicken breast fillets, cut into 3cm pieces
- 5milliliter olive oil cooking spray
- 1/2 cup whole egg mayonnaise
- 1tablespoons sriracha
- 1 lemon, cut into wedges (to serve)

Description
Try this gluten-free air-fryer chicken schnitzel recipe. Serve these crispy bite-sized chicken pieces with a spicy mayonnaise.
Method
Step 1 of 4
Preheat a 7L air fryer to 200°C for 3 minutes.
Step 2 of 4
Meanwhile, place flour on a plate and whisk egg in a shallow bowl. Combine breadcrumbs and parsley on a separate plate. Working with one piece of chicken at a time, toss in flour, then dip in egg and coat in breadcrumb mixture. Place on a baking tray. Repeat with remaining chicken, flour, egg and breadcrumb mixture.
Step 3 of 4
Place half the chicken, in a single layer, in air-fryer basket. Spray with oil. Slide pan and basket into air fryer. Set timer for 12 minutes. Cook, turning chicken halfway through cooking, or until golden and cooked through. Repeat process with remaining chicken.
Step 4 of 4
Meanwhile, combine mayonnaise with sriracha in a small bowl. Season with pepper. Garnish chicken with extra parsley, then serve with mayonnaise mixture and lemon.
