  • 240grams noodles, cooked
  • 140grams tofu, drained and diced
  • 1tablespoons sesame oil
  • 50grams snow peas
  • 1 small head bok choi, shredded
  • 1 stalk spring onion, sliced
  • 1 medium leek, julienne sliced
  • 1 large carrot, julienne sliced
  • 1 medium zucchini, julienne sliced
  • 1 small red chilli, sliced
  • 4tablespoons teriyaki sauce
  • 4 sprigs parsley, garnish

Description

 This vegetarian noodle recipe fuses tofu with crunchy Asian greens tossed in a spicy Teriyaki sauce. On the table in 15 minutes, this quick and easy dish is the perfect meat free meal.

Method

Step 1 of 3

Cook the noodles as per pack instructions, drain and set to one side. Fry the diced tofu in a wok or pan on a medium heat with the sesame oil.

Step 2 of 3

Fry the tofu for 6 minutes while turning and then add the rest of the vegetables. Continue to fry everything while tossing for a further 4 minutes.

Step 3 of 3

Add the noodles, chilli and teriyaki sauce and fry while tossing for a further 3 minutes before serving.
