  • 300grams hard tofu, cubed
  • 1 cup bean shoots
  • 2tablespoons red chilli (to serve)
  • 1/3 cup mint, chopped
  • 1/2 small red onion, finely sliced
  • 1 bunch broccolini, chopped
  • 1 lime, cut into wedges (to serve)
  • 1 cup vegetable stock
  • 200grams pad thai rice noodles
  • 1/2 cup laksa curry paste
  • 800milliliter coconut milk
  • 2 stalk lemon grass

Method

Step 1 of 3

Soak noodles in boiling water for 10 minutes to soften. Drain.

Step 2 of 3

Meanwhile, combine coconut milk, stock, laksa paste and lemon grass in a large saucepan and bring to the boil. Simmer for 5 minutes.

Step 3 of 3

Add tofu, broccolini and noodles. Simmer for 5 minutes until broccolini is just tender. Divide evenly into bowls, top with bean shoots, onion and mint. Serve with lime wedges and chilli.
