  • 350grams firm tofu
  • 4tablespoons canola oil, divided
  • 2teaspoons cornflour
  • 1tablespoons maple syrup, peeled and sliced
  • 2 large spring onions, sliced
  • 2 cloves garlic, peeled and crushed
  • 5centimeters ginger, peeled and grated
  • 2 large capsicums, green and red, diced
  • 1 large green chilli, sliced
  • 300grams mixed stir-fry vegetables, bag
  • 4tablespoons soy sauce (reduced salt)
  • 2tablespoons lime juice

Description

Sweet crispy tofu adds the perfect crunch and protein hit to this vegetarian stir fry.

Method

Step 1 of 3

In a large bowl, toss the cubed tofu with cornflour to coat. Heat 3 tablespoons of the oil in a large wok on a high heat and add the tofu. Fry for 2-3 minutes until golden and crisp on all sides. Remove from the pan with a slotted a spoon and drain on kitchen paper. Drizzle with maple syrup and set aside.

Add the remaining oil and cook the spring onions and capsicums for 3 minutes, then add the garlic, ginger and chilli and cook for 2 minutes. Add the mixed vegetables and cook for 1-2 minutes until softened.

Step 3 of 3

Pour in the lime juice and soy sauce, toss to coat well and divide between 4 bowls. Top with the crispy tofu and serve.
