- 1/4 cup unsalted peanuts, chopped
- 2tablespoons coriander, washed and chopped
- 1tablespoons rice bran oil
- 1 Spanish onion, peeled and finely sliced
- 80grams Hart & Soul satay curry recipe base
- 1teaspoons chilli sauce
- 1tablespoons soy sauce
- 300grams firm tofu, drained and cut in to 2cm cubes
- 2tablespoons full-fat coconut milk
- 440grams wok-ready noodles (udon or rice)
- 1 cup baby kale, finely sliced
- 1 cup beansprouts
Description
This spiced satay noodle recipe is a quick and easy vegan, Thai-inspired dish with soft noodles, tofu and kale tossed in a creamy spicy sauce for the perfect flavour combo.
Method
Step 1 of 5
Heat oil in a wok or large pan over medium heat. Add the onion and sauté for 3-minutes or until soft.
Step 2 of 5
Stir in one packet of Hart & Soul Satay Curry recipe base and add the chilli sauce and soy. Stir well to combine.
Step 3 of 5
Add the cubed tofu and gently mix to coat it in the base mixture. Cook for 1-minute before adding the coconut milk and 2 tbs water, stirring through.
Step 4 of 5
Break apart the noodles and add them to the wok, stirring to combine and cook until the noodles are heated through. Add the kale and beansprouts and cook for another minute.
Step 5 of 5
Remove from the heat and serve your spiced satay noodles in a bowl topped with chopped peanuts and fresh coriander.
