  • 450grams egg-free linguine
  • 4tablespoons tahini
  • 4tablespoons smooth peanut butter
  • 2tablespoons tamari sauce
  • 2tablespoons rice vinegar
  • 2tablespoons fresh root ginger
  • 1teaspoons toasted sesame oil
  • 1teaspoons chilli garlic sauce
  • 1 carrot, julienned
  • 1 cucumber
  • 3tablespoons gomasio
  • 4tablespoons spring onions, sliced, both light and dark green parts

Description

This vegetarian noodle recipe fuses crunchy veggies and soft noodles together in a sesame tahini peanut butter sauce. Creamy and nutty, this dish is quick and easy and delicious.

Method

Step 1 of 3

Bring a large pan of water to the boil over a medium-high heat. Add the salt and linguine and cook for 8-10 minutes or according to the packet instructions until the pasta is tender. Drain, rinse the pasta under cold water, and set aside.

Step 2 of 3

In a large bowl, whisk together the tahini, peanut butter, 4 tablespoons of hot water, tamari or soy sauce, rice vinegar, ginger, toasted sesame oil, and chilli garlic sauce.

Step 3 of 3

Add the cooked linguine, carrot, and cucumber to the sauce. Toss gently, garnish with gomasio and spring onions, and serve immediately.
