- 400grams noodles, cooked as per packet instructions
- 2tablespoons sesame oil
- 1L vegetable stock
- 2-plus 2 tsptablespoons soy sauce
- 4 medium shallots, sliced
- 4 cloves garlic, peeled and mashed
- 200grams mushrooms, sliced
- 1tablespoons ginger, chopped
- 2tablespoons miso paste
- 1 medium bok choi, grated
Description
A delicious noodle broth with soft and savoury vegetables and sticky noodles.
Method
Step 1 of 5
Cook the noodles as per packet instructions and then drain and set to one side.
Step 2 of 5
Heat up a large saucepan to a medium heat and then add the sesame oil.
Step 3 of 5
Fry the garlic, shallots, ginger and mushrooms for 5 minutes while tossing.
Step 4 of 5
Add 200ml of stock to the pan and fry while stirring for 3 minutes.
Step 5 of 5
Add the rest of the ingredients to the pan, bring to the boil and then allow to simmer for 20 minutes before serving. Stirring occasionally.
