  • 400grams noodles, cooked as per packet instructions
  • 2tablespoons sesame oil
  • 1L vegetable stock
  • 2-plus 2 tsptablespoons soy sauce
  • 4 medium shallots, sliced
  • 4 cloves garlic, peeled and mashed
  • 200grams mushrooms, sliced
  • 1tablespoons ginger, chopped
  • 2tablespoons miso paste
  • 1 medium bok choi, grated

Description

A delicious noodle broth with soft and savoury vegetables and sticky noodles.

Method

Step 1 of 5

Cook the noodles as per packet instructions and then drain and set to one side.

Step 2 of 5

Heat up a large saucepan to a medium heat and then add the sesame oil.

Step 3 of 5

Fry the garlic, shallots, ginger and mushrooms for 5 minutes while tossing.

Step 4 of 5

Add 200ml of stock to the pan and fry while stirring for 3 minutes.

Step 5 of 5

Add the rest of the ingredients to the pan, bring to the boil and then allow to simmer for 20 minutes before serving. Stirring occasionally.
