- 1 large onion, peeled and chopped
- 2 large capsicums, red and green, cored and chopped
- 300grams vegan meatballs
- 2teaspoons garlic and ginger paste
- 2tablespoons tomato sauce
- 1tablespoons soy sauce, reduced salt
- 300grams pineapple, tinned, sliced, juice reserved
- 3tablespoons honey, drained, chopped
- 3tablespoons white wine vinegar

Description
Vegan meatballs are delicious with crisp veggies and sweet and sour sauce, much tastier than takeaway.
Method
Step 1 of 3
Heat the oil in a large pan on medium high heat and cook the meatballs, stirring often, for 5 minutes until browned all over. Add the onions and capsicums and cook for 3-4 minutes.
Step 2 of 3
Stir in the garlic and ginger paste and tomato sauce and cook for 1 minute. Add the chopped pineapple, juice, honey, white wine vinegar and soy sauce and a splash of water if necessary.
Step 3 of 3
Reduce the heat and simmer for 10 minutes or until the sauce has thickened.
