  • 400grams chopped tomatoes

  • 80grams dried apricots
  • 2 cups vegetable stock, hot, made with 1 stock cube
  • 1/2 bunch coriander, fresh, chopped

Description

Pre-made vegan meatballs make this fiery and hearty Moroccan style stew really quick to make.

Method

Step 1 of 2

Heat the oil in a large pan on medium high heat and cook the meatballs, stirring often, for 5 minutes until browned all over.

Step 2 of 2

Add the onion and garlic to the pan and cook for 3-4 minutes. Stir in the harissa, pour over the stock and chopped tomatoes and add the chickpeas and dried apricots. Simmer for 15 minutes and serve with fresh coriander on top.
