Bocconcini & tomato heart skewers
  • 100grams Sweet Solanato® tomatoes
  • 110grams Woolworths cherry bocconcini
  • 1/4 bunch basil, leaves picked
  • 4 presoaked bamboo cocktail skewers
Chocolate-hazelnut-coated strawberries & watermelon
  • 1/3 cup chocolate-hazelnut spread, warmed
  • 80grams pistachio kernels, finely chopped
  • 4 small strawberries
  • 2 slices watermelon, cut into 3 cubes
Prosciutto-rose bruschetta
  • 1/2 mini pane di casa plain loaf, cut into 4 slices
  • 5milliliter extra virgin olive oil cooking spray
  • 1/3 cup basil pesto
  • 8 slices thin prosciutto
  • 1 cup pitted marinated olives
  • 1/4 bunch basil, leaves picked

Description

Whip up this easy Valentine's Day picnic spread – consisting of scrumptious themed appetisers – to impress your loved one and leave them feeling cherished.

Method

Step 1 of 3

To make prosciutto-rose bruschetta, heat a chargrill pan over medium-high heat. Spray both sides of bread with oil. Toast bread for 2 minutes each side or until golden. Cool. Take one piece of prosciutto, fold it into thirds lengthways. Roll into a coil. Repeat with remaining prosciutto. Spread toast with pesto. Top with prosciutto rose, olives and basil. Season with freshly cracked black pepper. Place in an airtight container and chill, if transporting. To serve, arrange on a serving board.

Step 2 of 3

To make heart skewers, cut each tomato in half on the diagonal. Using a cocktail skewer, thread 1 bocconcini, then 1 basil leaf and 2 tomato halves (with cut sides together to form a heart shape), adding another basil leaf and piece of bocconcini to finish. Repeat this process to make 4 skewers in total. Place in an airtight container and chill, if transporting. To serve, arrange on the serving board with bruschetta.

Step 3 of 3

To prepare the chocolate-hazelnut-coated fruit, place spread and pistachios in 2 separate small bowls. Dip watermelon and strawberries into the spread, then coat with pistachios. Arrange, in a single layer, in an airtight container and chill, if transporting. Arrange on the serving board with bruschetta and skewers.
