  • 1tablespoons Dijon mustard
  • 2tablespoons apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 100grams baby spinach leaves
  • 2 peaches, halved, destoned, thinly sliced
  • 1 avocado, cut into thin slices
  • 50grams Woolworths Danish-style feta, crumbled
  • 2tablespoons sunflower seeds

Description

This summery 10-minute salad is a delicious and refreshing way to enjoy juicy peaches. Arrange spinach, peach, avocado, feta and sunflower seeds in a bowl, then drizzle with a slightly sweet and tangy dressing.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Place chicken on prepared tray and cook for 20 minutes or until cooked and golden-brown.

Step 2 of 3

Meanwhile, add peach and garlic to a small food processor and blitz until smooth. Blend cornflour and 1/4 cup water in a small bowl until smooth. Add peach mixture to a small pan with vinegar, soy, mustard and cornflour mixture and stir to combine. Cook on medium heat, stirring frequently, for 8 minutes or until thickened and slightly darker in colour. Allow to cool.

Step 3 of 3

Place chicken and sauce on a platter. Serve sprinkled with parsley.
