- 1/3 cup pineapple juice
- 250grams fresh pineapple, finely chopped
- 250grams ready-made ginger cake, sliced
- 1 1/4 cup double cream
- 2-3tablespoons stem ginger, syrup from a jar
- 2 balls stem ginger in syrup, finely chopped
Method
Step 1 of 2
Line the base of a serving bowl with the slices of ginger cake, then pour over the pineapple juice, and scatter over the pineapple.
Step 2 of 2
Put the cream and ginger syrup in a mixing bowl and whisk with an electric hand whisk until soft peaks form. Spoon the mixture over the pineapple, then scatter over the chopped stem ginger. Chill in the refrigerator for 30 minutes, then serve.
