Method

Step 1 of 4

Wash apples and wipe well with a clean, dry towel. Push a stick into the stem end of each apple. Cover 1 baking tray with baking paper and set aside.

Step 2 of 4

Place sugar and 1 cup of water in deep heavy based pan. Stir over a low heat, without boiling, until the sugar has completely dissolved. Brush the side of the pan with a wet pastry brush to dissolve crystals. Stir in cream of tartar and food colouring.

Step 3 of 4

When the mixture is clear, bring to the boil. Reduce the heat slightly. Gently boil without stirring, for about 20 minutes until it’s soft crack stage or 138°C on a sugar thermometer (see tip). Remove from heat.

Step 4 of 4

Allow bubbles to subside. Carefully dip apples, one at a time, into the toffee. Swirl to coat. Place on prepared tray. Leave to set at room temperature. Don’t refrigerate.
