  • 2 large oranges, rind finely grated (plus juice of one orange and one cut into segments)
  • 2 orange
  • 185milliliter can evaporated milk
  • 3/4 cup caster sugar
  • 6 brandy snap baskets

Method

Step 1 of 4

Chill evaporated milk in the freezer for 1 hour. Combine sugar, orange rind and 1 cup orange juice in a saucepan and place over medium heat. Stir until sugar has dissolved and mixture comes to the boil. Reduce heat and simmer for 4 minutes. Remove from heat.

Step 2 of 4

Whisk gelatine and 2tbs cold water with a fork in bowl. Stand for 2 minutes. Stir into hot orange syrup until dissolved. Cool for about 30 minutes or until beginning to thicken.

Step 3 of 4

Pour chilled evaporated milk into a bowl. Using an electric hand beater, beat for 3 minutes or until thick and fluffy. Add orange mixture to milk. Gently stir with a large metal spoon until combined. Place in refrigerator to set.

Step 4 of 4

Spoon mousse into brandy baskets. Remove skin and pith form extra orange. Cut segments from orange and place a few slices onto each mousse. Serve.
