- 1/3 cup black olives, pitted, quartered

- 1/3 cup olive oil
- 1 bunch thyme, leaves picked, finely chopped
- 2teaspoons caster sugar

Method
Step 1 of 5
To make the za’atar, combine thyme, sesame seeds and sumac with 1 tsp salt in a bowl. Add 2 tbs olive oil. Stir until well combined and the mixture forms a paste. Set aside.

Whisk sugar, yeast, 3/4 cup hot water and 1 tsp salt in a jug. Stand in a warm place for 10 minutes or until frothy.

Place flour in a bowl and make a well in the centre. Add the yeast mixture and remaining oil. Stir to form a dough. Knead on a lightly floured surface for 5 minutes or until smooth. Place in a greased bowl. Cover and set aside in a warm place for 1 hour or until doubled in size.

Preheat oven to 200°C. Line two large baking trays with baking paper.

Halve dough. Roll out 1 portion to a 45x15cm rectangle. Place on a prepared tray. Spread with half the za’atar mixture. Repeat with remaining dough. Bake for 15 minutes or until golden and cooked through. Top with tomato, olives and mint, then serve.
