Mirror Glaze

5 Ingredients
- 1/2 cup glucose syrup
- 250grams white chocolate melts
- 1 cup sugar
- 6 sheets gelatine
- 1/2 cup condensed milk
Method
Step 1 of 3
Combine 1/3 cup of water and gelatine sheets in a small bowl. Set aside for 5 minutes to soften. Heat 1/2 cup water, sugar, condensed milk and glucose syrup in a small pan over medium heat, stirring occasionally, for 10 minutes or until sugar has dissolved and mixture starts to simmer. Remove from heat.

Squeeze excess water from gelatine, add to pan and stir until dissolved. Add white chocolate melts and stir until smooth. Strain through a sieve. Cool for 20 minutes.
Step 3 of 3
Divide glaze into separate bowls for each colour you are using. Add drops of colour to each, mixing well. Place coated, chilled cake on a board the same size. Sit on top of an inverted bowl, placed on a tray. Pour glazes over to cover completely. Allow excess to drip for about 10 minutes before scraping away drips using a spatula.
