- 1 1/4 cup coconut cream
- 1tablespoons red thai curry paste
- 1 chicken breast , diced
- 200grams rocket
- 2 cup bow pasta , uncooked
- 120grams chargrilled eggplant
- 1/2 cup semi dried tomatoes
- 1/2 cup chargrilled capsicum
Description
A twist on Thai red curry, try this colourful pasta recipe that’s packed full of flavour.

Step 1 of 5
Put pasta on to to cook. Whilst pasta is cooking, brown diced chicken in a frypan.
Step 2 of 5
Once chicken is browned, add coconut cream and thai red curry paste. Stir until chicken is cooked through and coconut and red thai curry paste are combined.
Step 3 of 5
Chop chargrilled eggplant, capsicum and semi dried tomatoes into thin strips. Add to mixture and stir through ensuring eggplant, capsicum and tomato are heated through. This should not take long (approximately 1 minute). Once heated through, remove from heat and pour into bowl.

Once pasta is cooked, drain and add to mixture ensuring to thoroughly stir through sauce.
Step 5 of 5
Add rocket and stir through. Serve hot or cold.
