- 1 1/2 cups jasmine rice
- 3 limes
- 1/4 cup sweet chilli sauce
- 1tablespoons fish sauce
- 1/4 red cabbage, finely shredded
- 1 carrot, shredded
- 3 spring onions, thinly sliced on the diagonal
- 1 bunch coriander, leaves picked
- 250grams bean sprouts, trimmed
- 1/4 cup unsalted roasted peanuts, chopped
- 1 fresh long green chilli, thinly sliced
Description
Aromatic Thai flavours make this rice salad a must-have on your festive table. This colourful side dish will complement your Christmas spread.
Method
Step 1 of 3
Cook rice according to packet instructions, following the absorption method. Cool.
Step 2 of 3
Juice 1 1/2 of the limes, then cut remaining lime into cheeks. Whisk sauces and lime juice in a large bowl.
Step 3 of 3
Add cabbage, carrot, onion, coriander, sprouts and rice to bowl. Season, then toss to combine. Sprinkle with peanuts and chilli. Serve with lime cheeks.
