- 2 cloves garlic, crushed
- 1/4 cup thai green curry paste
- 1tablespoons fish sauce
- 150grams green beanettes, trimmed, cut into 4cm lengths
- 1 bunch coriander, sprigs removed
- 1 brown onion, finely chopped
- 500grams pumpkin, cut into 2cm cubes
- 2tablespoons lime juice
- 700grams seafood marinara mix
- 2 cup rice, steamed (to serve)
- 400grams coconut milk
- 2teaspoons brown sugar
- 1tablespoons vegetable oil

Method
Step 1 of 3
Heat the oil in a wok or large frying pan over medium heat. Add onion and garlic, and cook for 4 minutes or until soft. Stir in curry paste and cook for 2 minutes or until aromatic. Add coconut milk, fish sauce, lime juice and brown sugar. Stir to combine. Bring just to the boil.

Add pumpkin and cook for 5 minutes or until just tender. Add the marinara mix and beans. Cook for 5 minutes.
Step 3 of 3
Roughly chop half the coriander and stir through curry. Serve garnished with remaining coriander and steamed rice.
