  • 400grams pork fillet, sliced
  • 1 medium red onion, peeled and chopped into chunks
  • 2 large red capsicums, chopped into chunks
  • 3 cloves garlic, peeled and finely chopped
  • 1/2teaspoons chilli flakes
  • 60grams ketchup, reduced sugar
  • 2tablespoons apple cider vinegar
  • 3tablespoons soy sauce, reduced salt
  • 250grams pineapple, canned, juice reserved

Description

Lighter homemade sweet and sour sauce makes this healthier than takeaway but just as delicious and quick.

Method

Step 1 of 3

Heat half of the oil in a large pan on medium high heat and cook the pork for 2-3 minutes, remove from the pan with a slotted spoon and set aside.

Step 2 of 3

Heat the rest of the oil and cook the onions and capsicums for 3-4 minutes, add the garlic and chilli flakes and cook for 1 minute.

Step 3 of 3

Stir in the ketchup, apple cider vinegar, soy sauce and pineapple chunks and juice plus half a can of water and cook for 1 minute or until bubbling. Add the pork back into the pan and cook for 5-6 minutes, until the pork cooked through and sauce is reduced.
