- 2tablespoons small basil leaves (to serve)
- 1 small green capsicum, deseeded (finely diced)
- 1/2 small red onion (thinly sliced into rounds)
- 4 large washed white potatoes
- 1tablespoons extra virgin olive oil
- 2teaspoons dried chilli flakes
- 1 cabanossi (thinly sliced)
- 2tablespoons pizza sauce
- 60grams baby rocket leaves
- 220grams pitted mixed marinated olives (drained)
- 1 cup Italian inspired shredded cheese
- 1/4 cup basil pesto
- 150grams mild salami (thinly sliced)

Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Prick potatoes with a fork, place in a bowl, then add oil and toss to coat. Arrange on tray, season, then bake for 1 hour or until tender.
Step 2 of 3
Remove potatoes from oven and cool slightly. Cut in half, spread each with pizza sauce and scatter over cheese. Top with salami, cabanossi, olives, capsicum and onion. Bake for 15 minutes or until cheese has melted and is golden.
Step 3 of 3
Place chilli, pesto and rocket in separate bowls. Arrange potatoes and bowls on a large board. Top potatoes with basil leaves to serve.
