  • 400grams spaghetti
  • 200grams small mushrooms, sliced
  • 1 small onion, thinly sliced
  • 200grams cherry tomatoes, halved
  • 1/2teaspoons dried chilli flakes
  • 2teaspoons thyme leaves
  • 3 cup chicken stock
  • 1/4 cup parmesan, freshly grated (to serve)
  • 3 rasher streaky bacon, sliced
  • 1tablespoons olive oil

Method

Step 1 of 3

Heat oil in a large frying pan over medium heat. Add onion, bacon, mushrooms, garlic and chilli and cook, stirring often, for 3 minutes or until golden. Transfer to a bowl and set aside. Remove pan from heat.

Step 2 of 3

Add tomatoes, spaghetti, thyme, stock and cream to pan. Return pan to medium-high heat. Bring to the boil and cook, stirring and turning pasta with tongs, for 8-10 minutes or until al dente and liquid has been absorbed.

Step 3 of 3

Return mushroom mixture to pan and reheat for 1-2 minutes. To serve, divide between serving bowls and top with parmesan and parsley.
