  • 4 egg whites
  • 1 cup caster sugar
  • 1/4teaspoons cream of tartar
  • 1teaspoons white vinegar
  • 1teaspoons cornflour
  • 1teaspoons vanilla-bean paste
  • 600milliliter Woolworths thickened cream, whipped
  • 250grams strawberries, halved and quartered
  • 6 white chocolate stars
  • 15grams strawberry crisps
  • 1/4 bunch mint, sprigs picked

Description

This stunning strawberries and cream pavlova wreath is the stuff of Christmas dreams. It's simple to make and the ticket to elevate your festive dessert spread.

Method

Step 1 of 5

Preheat oven to 100°C/80°C fan-forced. Line 2 large baking trays with baking paper.

Step 2 of 5

To make meringue, use an electric stand mixer to beat egg whites, sugar and cream of tartar for 10 minutes or until sugar has dissolved and mixture is thick and glossy. Add white vinegar, cornflour and vanilla-bean paste. Beat for 30 seconds or until combined.

Step 3 of 5

Spoon meringue mixture in varying sizes (between 4cm and 6cm in diameter) onto prepared baking trays. Bake for 1 hour and 30 minutes or until meringues are firm to touch. Turn oven off, then allow meringues to cool completely in the oven.

Place meringues in a wreath shape, approximately 25cm in diameter, on a serving board. Using an electric stand mixer, beat cream until just-firm peaks form. Dollop cream on top of meringue wreath and top with fresh strawberries and chocolate stars.

Step 5 of 5

Roughly chop strawberry crisps. Sprinkle over wreath and arrange mint on top. Serve immediately.
