Description
Give every guest a handheld cup of joy this Christmas with these cheesecake-inspired strawberry jelly parfaits. They’re easy to make, too.
Method
Step 1 of 4
Place jelly crystals and 2 cups boiling water in a jug. Whisk with a fork until crystals dissolve. Set aside for 30 minutes to cool to room temperature. Chill jelly for 1 hour or until syrupy.
Step 2 of 4
Blitz biscuits in a food processor until a fine crumb forms. Divide crumb mixture evenly among 8 x 11/2-cup-capacity glasses. Wash and dry food processor.
Step 3 of 4
Place cream cheese, vanilla and sugar in the clean food processor. Blitz until smooth. Spoon mixture among glasses. Smooth top, then spoon syrupy jelly mixture over cream-cheese layer, pushing a few strawberry slices into jelly. Chill for 4 hours or until set.
Step 4 of 4
Whisk cream until soft peaks form. Top jelly with whipped cream and sprinkles. Serve.
