  • 560grams lychees
  • 250grams rocket
  • 1 medium shallot, peeled and thinly sliced
  • 2 medium radishes, thinly sliced
  • 2 medium carrots, peeled into ribbons
  • 6tablespoons sesame oil
  • 1 small red chilli, sliced
  • 2teaspoons rice wine vinegar

Description

Lychees and chilli make this light salad sweet and spicy.

Method

Step 1 of 4

Drain the lychees, reserving 2 tablespoons of syrup and chop into halves.

Step 2 of 4

Whisk the lychee syrup, half of the sesame oil, rice wine vinegar and half of the chilli together to make a dressing.

Step 3 of 4

Heat the rest of the sesame oil in a large pan on medium heat and fry the shallots for 4-5 minutes until crispy.

Step 4 of 4

Place the rocket, radishes, carrots and lychees in a large bowl, pour over the dressing and toss well to coat. Serve with crispy shallots and extra chilli on top.
