- 8 slices ciabatta bread, cut 2cm thick
- 2tablespoons basil leaves, finely chopped

Description
This quick and easy bruschetta makes a tasty, instant brunch, or a simple snack at any time of the day.
Method
Step 1 of 3
Heat the oil and butter in a large, non-stick frying pan. Add the tomatoes and fry for 2 minutes, until they begin to cook.
Step 2 of 3
Add the chorizo and continue to cook for 2-3 minutes, until the tomatoes begin to break down and the chorizo colours. Season well and add the balsamic vinegar.
Step 3 of 3
Toast or grill the ciabatta bread. When the chorizo mixture is ready, take it off the heat, mix in the basil, and serve it piled on top of the bruschetta.
