  • 4 1/2 tbs olive oil
  • 500grams chicken thigh fillets, halved
  • 2 stir-fry rainbow vegetables

Description

Four ingredients, four steps and a 25-minute cook time, this one-tray baked chicken dinner couldn’t be easier.

Method

Step 1 of 4

Preheat oven to 230°C. Whisk honey, soy and 1 ½ tbs olive oil in a bowl.

Step 2 of 4

Place chicken in a baking paper-lined baking pan. Spoon over soy mixture. Season. Bake for 15 minutes or until golden brown.

Step 3 of 4

Add vegetables to pan,then drizzle over 2 tbs olive oil.

Step 4 of 4

Mix vegetables with cooking juices. Bake for a further 2 minutes or until vegetables are warmed through. Serve.
