  • 6 eggs, lightly whisked
  • 1/2 cup basil leaves, shredded
  • 2 sheet frozen shortcrust pastry, just thawed

Description

Master the art of tarts with this leek and smoked salmon quiche recipe, made from minimal ingredients. It's perfect for picnics and outdoor gatherings.

Method

Step 1 of 4

Preheat oven to 200°C. Lightly grease a deep 24cm round tart tin. Join pastry sheets together and line tin, trimming excess. Place on a baking tray. Line with baking paper and fill with dried beans or rice. Bake for 15 minutes, then remove paper and beans and bake for a further 10 minutes or until pale golden.

Meanwhile, melt butter in a saucepan over medium heat. Add leek. Cook, stirring, for 3 minutes or until soft but not brown. Cool.

Step 3 of 4

Combine creams, egg, basil and cooled leek in a bowl. Season. Gently stir in salmon. Spoon into pastry case.

Step 4 of 4

Bake for 45 minutes or until the filling is cooked and golden. Top with extra basil.
