- 3 shallots, finely chopped
- 1 lemon
- 1/2 cup sweet chilli sauce (to serve)
- 1 pinch pepper (for seasoning)
- 4 slice white bread, crusts removed
- 500grams ocean trout fillets
- 2 egg whites
- 1/2 bunch dill, tips picked
- 1 pinch sea salt ground (to taste)

Method
Step 1 of 3
Remove skin and any bones from the fish fillets and chop into small pieces. Place into a large bowl with the egg whites and season with salt and pepper.
Step 2 of 3
Chop bread into small cubes and add to the bowl. Finely chop the dill and add to the mixture with the shallots and finely grated lemon rind. Using clean hands mix together and then refrigerate for 20 minutes.
Step 3 of 3
Preheat oven to 200°C. Line a baking tray with baking paper. Shape tablespoon of mixture into rounds and place on tray. Bake for 15 minutes until lightly browned. Drizzle with lemon juice and serve with sweet chilli sauce.
