Tartare Sauce
  • 3teaspoons gherkins, finely chopped
  • 600grams fresh skinless salmon fillets, pin-boned
  • 2 cm piece fresh ginger, finely grated
  • 1/2 small red onion, coarsely grated and drained on paper towel
  • 3tablespoons fresh continental parsley, chopped (save 1 tbs for tartare)
  • 5milliliter virgin olive oil spray, for greasing
  • 1 lemon (save 1 tbs for tartare)
  • 2tablespoons whole egg mayonnaise

Method

Step 1 of 4

Finely dice the salmon and add to a large bowl with onion, ginger, parsley, mayonnaise and lemon juice. Season. Form 1/4 cups of mixture into patties. Place onto a tray, refrigerate for 15 minutes if time permits.

Step 2 of 4

Spray a large non-stick frying pan with oil. Heat over a medium-low heat. Cook patties in batches, for 2 minutes each side or until cooked through and golden.

Step 3 of 4

For the quick tartare, combine mayonnaise, gherkins, lemon juice and parsley in a medium bowl. Season.

Step 4 of 4

Serve patties with quick tartare. Tip 1: Spray measuring cup with spray oil, so that the salmon mixture doesn’t stick. Tip 2: Swap quick tartare with Woolworths Gold curry mayonnaise for a different flavour. Tip 3: These patties make great salmon burgers topped with salad leaves and cucumber.
