- 2 sheet frozen butter puff pastry, partially thawed
- 3teaspoons horseradish cream
- 500grams fresh salmon portions, skinned and boned, foughly chopped
- 1 lemon, rind finely grated (plus juice)
- 1tablespoons sesame seeds
- 1 egg
- 1/2 cup panko breadcrumbs
- 1/4 cup dill, sprigs finely chopped
- 1 bunch chives, finely chopped
- 220grams tartare seafood sauce
- 3 lemon, cut into wedges (to serve)

Method
Step 1 of 5
Preheat oven to 200°C. Line a tray with paper.
Step 2 of 5
Place salmon into a food processor and process until finely chopped. Transfer to a bowl. Add breadcrumbs, egg, chives, dill, horseradish, lemon rind and 1 tbs juice. Season and stir well to combine.
Step 3 of 5
Lay 1 pastry sheet on a chopping board. Cut in half. Place 1/4 of the salmon mixture in a sausage shape on the long side. Roll up. Cut into 5 pieces. Repeat with remaining pastry and salmon mixture.

Brush salmon rolls with whisked egg. Sprinkle with sesame seeds and a little sea salt.

Bake for 20-25 minutes or until golden. Serve with tartare and lemon wedges.
