- 75grams butter
- 1 small onion, finely chopped
- 1 leek, sliced
- 2 celery sticks, sliced
- 2 cloves garlic, crushed
- 1 lemon, grated rind
- 2teaspoons tarragon, chopped
- 1 1/4 cup double cream
- 500grams white fish fillets, cubed
- 150grams raw peeled prawns
- 1 small baguette, thinly sliced
- 1 pinch salt
- 1 pinch black pepper
Method
Step 1 of 4
Melt 25 g of the butter in a saucepan, add the onion, leek, celery, garlic, lemon rind, tarragon and salt and pepper to taste and cook gently for 10 minutes until soft.
Step 2 of 4
Add the cream and bring to the boil, then reduce the heat and simmer gently for 2 minutes until thickened. Remove from the heat and stir in the fish and prawns.
Step 3 of 4
Spoon the seafood mixture into a 1 litre pie dish. Melt the remaining butter in a small saucepan. Arrange the bread slices over the fish, overlapping, and brush with the melted butter.
Step 4 of 4
Bake in a preheated oven, 180°C , Gas Mark 4, for 15-20 minutes until the bread is golden. Cover with foil and bake for a further 10 minutes until the fish is cooked.
