10 Ingredients

  • 4 sheet ready-rolled frozen butter puff pastry
  • 500grams salmon portions, finely chopped
  • 2 spring onions, thinly sliced
  • 250grams english spinach
  • 1 lemon, rind finely grated
  • 1 cup Greek yoghurt
  • 1 cup long grain white rice, cooked
  • 1tablespoons whole egg mayonnaise
  • 1 egg
  • 1/4 cup dill spigs, finely chopped

Method

Step 1 of 8

Preheat oven to 220°C. Line a large baking tray with baking paper.

Step 2 of 8

Place spinach into a bowl. Cover with boiling water and stand for 2 minutes to wilt. Drain and rinse. Squeeze out liquid from spinach. Roughly chop.

Step 3 of 8

Stir in about double the amount of liquid (such as water or stock) and simmer in a covered saucepan for about 15 minutes. Do not try to stir the rice while it is boiling. Remove the pan from the heat and place a clean tea towel under the lid - this will help absorb the steam and keep the grains separate.

Combine rice, spring onion, egg, lemon rind, juice and 1 tbs dill in a bowl. In a separate bowl, combine hard-boiled eggs and mayonnaise.

Using 2 sheets of pastry overlap edges by 1cm and press with fingertip to join. Trim to 16x35cm and transfer to tray. Reserve excess pastry for decorating.

Step 6 of 8

Spread rice mixture evenly onto pastry leaving a 3cm border. Layer half of the salmon over, spinach, remaining salmon and finish with egg mixture.

Step 7 of 8

Join remaining pastry, as per step 3, and trim to 18x35cm. Brush border of base pastry with extra egg. Lay pastry over filling to cover and press edges together to seal. Trim excess. Cut reserved pastry into 1cm wide long strips. Decorate top in a diamond pattern. Brush with egg. Bake for 20 minutes. Reduce oven to 200°C and bake for a further 20 minutes or until golden and crisp on top.

Combine yoghurt and remaining dill in a bowl. Serve with yoghurt sauce.
