For the dressing
  • 3tablespoons extra virgin olive oil
  • 1tablespoons white wine vinegar
  • 1tablespoons mango juice
  • 1 fresh ripe papaya
  • 1 fresh red chilli, deseeded and finely chopped
  • 1 lime, juice only
  • 1 pinch caster sugar
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 2 large handfuls fresh spinach leaves
  • 1 handful fresh basil leaves
  • 450grams smoked chicken, sliced

Method

Step 1 of 3

First, make the dressing. Whisk together the oil, vinegar, and mango juice in a jug or small bowl. Season well with salt and black pepper, and set aside.

Step 2 of 3

Now make the salsa. Halve the papaya, and remove the seeds. Peel then chop the flesh. Put the papaya in a bowl with the chilli, lime juice, and sugar. Season well with salt and black pepper, then taste and adjust the seasoning if needed.

Step 3 of 3

Toss the spinach and basil in a large bowl with the dressing, then divide among 4 individual plates. Arrange the smoked chicken over the top. Serve with the salsa spooned over the top or on the side.
