- 2 medium onions, peeled and sliced
- 2 medium carrots, peeled and chopped into chunks
- 300grams vegetarian sausages
- 1 large sweet potato, peeled and chopped into chunks
- 4 cloves garlic, peeled and sliced
- 1 cup vegetable stock, made with 1 stock cube
- 400grams chopped tomatoes
- 1/4 bunch rosemary, 3 sprigs
- 2teaspoons oregano
- 100grams kale, destalked and chopped
- 50grams parmesan, vegetarian, grated

Description
Vegetarian sausages stay juicy when cooked gently in the slow cooker in this tasty casserole.
Method
Step 1 of 2
Heat the oil in a large pan on medium high heat and cook the onions for 5 minutes. Remove with a slotted spoon and add to the slow cooker. Cook the carrots and sausages with the garlic for 2-3 minutes and add to the slow cooker.
Step 2 of 2
Tip in the sweet potato, chopped tomatoes, rosemary, oregano and stock and cook on high for 3.5 hours. Stir in the kale and parmesan and cook for 20 minutes, until wilted. Remove the rosemary and serve.
